Yiros Meal Prep

My Sunday go-to 20 min meal prep for the work week
for this meal, I like to prep all the ingredients in separate containers and build it fresh every day at work
Method:
Start by dicing your chicken breast into cubes
Transfer into a large mixing bowl and cover in cornflour + McCormick Greek Seasoning
Spray the air fryer with olive oil
Add chicken to air fryer and cook for 15 minutes
Dice cucumber, tomato, + red onion and add to the container (add a little bit of lemon juice)
Cut iceberg lettuce and add a container
Add cooked chicken to a container
Homemade tzatziki:
Grate 1 cucumber Into a mixing bowl (no need to peel or seed the cucumber first, grate on the large holes of your box grater)
add the grated cucumber to the center of the paper towel
Squeeze out cucumber moisture
add 125g of plain Greek yogurt
+ 1 tablespoon lemon juice
+ 1 medium clove garlic, pressed or minced
+ ½ teaspoon fine sea salt
and mix!
keep it in a sealed container in the fridge
add all to your souvlaki wrap and enjoy!
