Here are the ingredients you'll need:

  • Gnocchi

  • 1/2 tub of light Philadelphia cream cheese

  • 1/2 cup almond milk

  • 1/2 cup light cheese

  • 1/2 brown onion

  • 1 teaspoon of minced garlic

  • 2 tablespoons Peri-Peri Nando's sauce

  • 300g diced shortcut bacon

  • 500g chicken breast

  • Mingle garlic & herb seasoning

  • Leftover pasta water

Follow these steps to prepare the dish:

  1. Cook the gnocchi according to the package instructions. Once cooked, set it aside.

  2. In a large pan, cook the diced bacon until crispy. Once cooked, remove it from the pan and set it aside.

  3. In the same pan, cook the chicken breast until it's fully cooked. Once cooked, remove it from the pan and set it aside.

  4. In the same pan, sauté the minced garlic and brown onion until they become fragrant and translucent.

  5. Add the cooked bacon back into the pan, along with the cooked chicken breast. Stir everything together to combine.

  6. Add the light Philadelphia cream cheese, Peri-Peri Nando's sauce, and almond milk to the pan. Stir until the cheese melts and the sauce becomes creamy.

  7. Sprinkle in the Mingle garlic & herb seasoning for added flavor.

  8. Add some leftover pasta water to the pan and stir to incorporate it into the sauce.

  9. Finally, add the cooked gnocchi to the pan and toss it well to ensure it's coated with the delicious sauce.

  10. To finish, top the dish with some light cheese and it's ready to be served!
